Nathan's "Polish" Soup
This soup is about as Polish I am... which is only a little. My great Grandma would tell you she was German, but her maiden name ended with a 'ske. It was inspired by a soup I love at a local bar and resturant once named the "Best Bar in America".

Ingredients
- 2 heads garlic
- 4 medium potatoes , diced
- 1 large onion, diced
- 8 cups vegetable stock
- 2 full kielbasa, cut to bite size pieces
Directions
- Preheat oven to 375 F.
- Place the unpeeled garlic bulbs in a small pan and bake for 30 mins.
- Boil the potatoes for 10 mins.
- Simmer the stock in another pan for 5 mins.
- Drain the potatoes and add them, onions, garlic (squeeze the cloves out of outer layers), and kielbasa to the stock.
- Simmer for 15 minutes or longer.
- Serve with slice or two of whole wheat or rye bread. Pair with your favorite beer. I'd recommend a Grainbelt Nordeast, Newcastle Brown Ale, or Paulaner Salvator.
